“So simple” Sweet and Sour Salad

Sweet and sour salad

Nothing to prepare or almost? This recipe is perfect if you are running late and when your stomach is screaming.
I am going to share a very simple sweet and sour salad recipe that is delicious and comforting.
The preparation is quick and the taste is great :-)

Ingredients:
- Half an iceberg salad
- 1/3 pack of bacon - Note: In France, I found ready-to-use "lardons" which are bacon pieces, thin and short (you can google it to see pics). In the US, I just buy good quality bacon (organic is preferred) and I cut it in small pieces in advance. I store them in a box in my fridge, for about 2 weeks. Easy!
- 2 handfuls raisins
- 1 tbsp plain yogurt (low fat or no fat)
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar
- Salt & pepper
- Herbes de provence (Provence herbs - if you don't have any, mix dry herbs like: thyme, rosemary, oregano, basil.)
- Sliced toasted almond, for topping (optional)
- 1/3 cup grated Swiss gruyère or other sharp cheese


Start by chopping the iceberg lettuce.
Toast the almonds in the oven and set aside.
Prepare the vinaigrette: Whisk together the yogurt, olive oil and balsamic vinegar. Add the Provence herbs, salt and pepper.


In a pan, fry the bacon. Don't add any oil, the grease of the bacon will melt and allow it not to stick. It should become slightly brown and be crispy. When done, put the bacon to rest quickly on a paper towel.


In a salad bowl, mix together the chopped iceberg salad, raisins, vinaigrette. Put on plates.
On top of the salad, add the toasted almonds, bacon and cheese.
